Cultured milk products are the result of the fermenting processes when a selected combination of bacteria or yeast is added to the milk. The two most popular production methods of cultured milk products are:
- production of products with broken coagulum /fermentation in tanks.
- production of products with hard coagulum /fermentation in commercial packaging.
The variety of cultured milk products is not only the result of a diverse range of starter cultures but also the different ingredients that are added such as sweeteners and flavourings, fruits and vegetable additives amongst others. These lines are offered with three levels of automation: low LLA, medium MLA and high HLA.
Indal Partner offers clients installation of complete lines or we can supply separate modules including design, installation and initial start up.
This equipment is designed for the pasteurization processes through heating and cooling operations by milk recirculation on the path: product vat – recirculation pump – heat exchange module – product vat. The whole pasteurization process is automate, all operations are controlled by a processor.
Structure:
a) Plate heat exchanger with three compartments used as follows:
- COMPARTMENT 1 - for heating the product up to 92℃ - flow of 2000 l milk/h
- COMPARTMENT 2 - for cooling the product with supply water from 92℃ to 50 ℃ - flow of 2000 l milk/h
- COMPARTMENT 3 - for cooling the product with glycol, from 50℃ to 4 ℃ - flow of 2000 l milk/h
b) Hot water making - recirculating machine made of:
Manual open/close steam valve;
Steam filter;
Steam flow control vat, pneumatic drive;
I/P converter;
Brazed steam-water plate heat exchanger;
Hot water recirculation pump, max. temp. 120℃;
Safety and control accessories such as: thermometer, manometer, pneumatic valve, safety valve, expansion vessel etc.
c) Automatic water ice flow control machine made of:
Steam flow control vat, pneumatic drive;
I/P converter;
Safety and control accessories such as: temperature sensor, temperature regulator, thermometer, manometer etc.;
d) Electrical board
e) Stainless steel base.
